I`ve never stir-fried fresh egg noodles before but decided to give it a try after having it at a Vietnamese restaurant a few weeks ago. My husband who is a noodles lover loved it and requested me to make this for him all the time, LOL! Anyways, what I did was first blanched the fresh egg noodles in hot water, then I quickly run them under cold water to stop the cooking process. After draining the noodles, I mixed in some olive oil just prevent the noodles from clumping together. After that, I stir-fry the noodles in a pan and added sweet soy sauce, regular soy sauce and pepper before setting the noodles aside. You can add any vegetables or your choice of protein in the noodles but I used whatever I had in my fridge such as carrots, celery, spinach, bean sprouts and shitake mushrooms :) If you love noodles and don`t want to burn a hole in your pocket eating out, you can always make your own at home. After all it`s so easy, affordable, healthy and delicious!
