I`ve got a new recipe to share with all of you. If you like Oreos, this is definitely the cupcake for you.
I`ve read many blog posts about oreo cakes that don`t have a lot of flavor, just cake with little oreo specks. I agree with that completely, but after trying out this recipe I`ve found a new love. They are very sweet and full of flavor. And cute too!
Here`s what you need.
1 package Oreo Cookies, regular size
1 package Mini Oreo Cookies, for decoration (optional)
1 package chocolate cake mix (mix according to directions on box)
8 ounces cream cheese, room temperature
1/2 cup butter (1 stick), room temperature
3 3/4 cups powdered sugar
1 teaspoon vanilla extract
** When it comes to the chocolate cake mix, I personally really enjoyed a dark chocolate mix more than just a regular chocolate cake mix. I think it has a lot more flavor, but it`s delicious either way!
Oven Temp: 350 degrees
Cooking Time: 25 to 30 minutes
Mix the cake mix as directed on the box, but do not bake yet! Place a regular sized oreo cookie in the bottom of every cupcake liner. Depending on how many cookies you want in your cupcake, coarsely chop up some of the remaining oreos and mix them into your cake mix, probably about half of the remaining cookies. Bake for about 15 minutes or as directed on box. If you`ve ever baked before, you`ll know when they`re ready. While your cupcakes are baking make the frosting. Cream together the butter and the cream cheese. Add vanilla and the powdered sugar, slowly. Mix it well! Take the rest of the oreo cookies and chop them into very fine pieces. An easy way to do this is to use a food processor. Mix the cookies into the frosting, and after the cupcakes have cooled you can frost them. Mini oreos make a great cupcake topper for this dessert. The oreo at the bottom of the cupcake remains crunchy and full of flavor, adding a nice touch to the soft cupcake!
