My dad recently celebrated his 60th birthday, but being the homebody that he is, he refused to let us make it a big deal LOL (I think he`s in denial about getting old, or at least that`s what I kept joking with him about :P)
He threatened us if we tried to throw him a surprise party like we did for his 50th since we invited ALL our family and friends... haha so the one my sister and I had in mind quickly went out the window :P
My sister and I told my mom that we would treat our parents to a nice steak dinner but my dad is kind of a homebody and wanted to stay relax. So instead we had a simple night at home but I offered to make dinner.
We had, Parmesan crusted chicken, roasted potatoes, butternut squash, asparagus and couscous! I was actually really impressed with myself since I was able to pull this dinner together last minute.
All of the recipes are actually really simple and easy, but they come out looking like a gourmet meal!
The chicken is a recipe I got online. All you need is Parmesan, mayonnaise and Italian breadcrumbs. You take the parm and mayo and mix it spreading it over the chicken. You top it off with Italian breadcrumbs and bake until the chicken is cooked through. The chicken came out super juicy but my family and I like spicy foods and this was kind of boring compared to what we normally eat. Next time, I`m going to marinade the chicken in some hot sauce or something, or maybe add some spices to the Italian breadcrumbs.
Next I made roasted potatoes, using small white potatoes. I cut them in quarters (or halves if they were really small) and tossed them will olive oil and spices. I used oregano, garlic powder, onion powder, chili flakes, crushed red pepper salt and black pepper, but you can use whatever you like. One you are done you just pop em in the oven until the potatoes cook through.
The couscous is actually really simple to make as well, and it`s very quick. I just followed the directions on the package and boiled some water. 1 cup water to 1 cup couscous. You put them in a bowl and leave covered for 5 minutes and it`s cooked! All you have to do after that is add some olive oil and run a fork through it to fluff it up! You can then add whatever you want to it. I diced some bell peppers, tomatoes and cucumber and added it in.
The asparagus was also really easy to cook. I boiled some water on the stove top, and put the asparagus in to blanche them. After about a minute I took them out and dunked them into ice water till I was really to cook it. I then heated them up in a pan with some olive oil and crushed garlic. Simple, easy and delish!
Last, but not least, was the butternut squash. This is actually something my mom makes often since we all love it. And it is SOOOOOO easy! You take the squash and cut it in half. At this point, if you are in a hurry, it`s best to steam the squash so that it cooks faster and the easiest way to do that is in a microwave! We put them in a shallow dish with just a little bit of water and place them face down and nuke em until they are a little tender. After that all we do is take some butter and spread it along the inside and broil it in the oven!
