A few days ago at work I decided to make some little individual meringues as a dessert special, these are very easy to make and look so sweet and pretty!
All I did was make a basic meringue recipe, pipe it in to a small circle - slowly building up the sides until it created a nest then baked them in the oven on 100`c for an hour and an a half. The trick to a perfect meringue is to leave them in the oven for another hour or so after cooking while you get on with another job and you`ll be left with crisp, delicious meringue!
To present I just whipped up some Chantilly cream (double cream with vanilla pod and icing sugar) piped it in to the meringue nest then added diced strawberries, a few mint leaves and then dusted with icing sugar.
