Custard tart (Pastéis de Nata) by Neuza Costa

Ingredients for 24 crayons:
600g of Puff Pastry fresh
500ml of milk
1 lemon peel
1 cinnamon stick
60g plain flour without yeast
500g of sugar
250 ml of water
7 gems

1. With a rolling pin, roll out dough into a rectangle.
Roll dough into a roll, pressing well so that the roll is tight.
Cut dough into slices with a thickness of 1.5 cm.

2. Put the slices into the shapes of pastels, smeared with butter.
Thumbs, begin to push the center of mass and spread it to the edges so that they become thicker, being more thin dough at the bottom.
Place the shapes on a baking tray.

3. Dissolve the flour in a little milk.
Bring the remaining milk to boil, add the cinnamon stick and lemon peel.
When boiling, add the flour and stir well.
Stir until it starts to boil and turn off the heat.

4. In a pan, bring to boil the sugar and water and stir.
After it starts to boil, simmer 3 minutes exactly.
Add the sugar syrup into yarn milk and mix well.
Strain in a sieve and let it cool
NOTE: Leave it to cool until cold.

5. Add the gems with the cream and stir well.
Fill forms with cream.
Bake in preheated oven at 250 º for 17 minutes.

6. Once cooked, unmold.
Serve hot or cold, sprinkled with powdered sugar or cinnamon.
