This is what I made for our dinner tonight. It was a simple meal with the meat done in the crock pot. One of the sides was something of a trial/test.
I made a turkey breast in the crock pot. It was so easy. I tossed the whole turkey breast into the crock pot and then poured a bit of chicken stock over the top, a touch of extra virgin olive oil, a dry french onion soup packet, pepper, and garlic powder. I turned it onto high for one hour and after that to low. It cooked on low for about....8 hours.
For the sides I made faux mashed potatoes (actually done with cauliflower) and garlic green beans. The green beans were frozen green beans tossed into a pan with some chicken stock, minced onion and garlic, salt, pepper. I put the lid on and let them go on medium-high heat until tender.
The mashed "potatoes" was my trial side. I figured I`d cut some carbs by replacing the potatoes with cauliflower. Oh my gosh... not very good. It isn`t that it was horrible.. but I just can`t call it a replacement for the real thing. Yes it looks like mashed potatoes, but there are teeny-tiny bits that you just can`t get as smooth as a potato plus it doesn`t have the right taste. It just tastes like mushy cauliflower with butter, salt, and pepper. I know some people are satisfied replacing potatoes with cauliflower... but in the future I`m just going to risk the carbs and have the real deal.
