This is one of my dinners I had made the week before last. With having such a long commute home, dependent upon the weather and traffic in general, I have been looking for simpler meals. I had a weeks worth of meals planned out in my head. I had actually planned on making a beef tenderloin in the crockpot, but when I went to the market to pick up the beef I was told they didn`t have any and the only thing "closest" to it would be a pot roast. The butcher offered to clean it up for me, so I allowed him to do so, so he cut all the fat off the thing which saved me a ton of time since I was going to have to clean it when I got home so I could throw everything together in the morning and take off for work for the day.
I put the 2 pound pot roast at the bottom of my crock pot, put in 2 cans of diced tomatoes (one italian seasoned), a packet of Lipton onion soup mix, dash of pepper, minced garlic, fresh mushrooms, baby carrots, diced onions, diced peppers, and wedged potatoes. I figured I wanted more of a "gravy" consistency when it was done cooking, so I added in a can of pork gravy. I put the lid on, set it on low and checked on it when I got home 10 hours later. It was cooked to perfection and ready to eat. The flavors had blended together perfectly and I was really pleased with the turnout. I separated the veggies into one bowl and put the meat in another. My boyfriend absolutely loved it. I thought it was fabulous and it was our dinner and lunch the following day. We had some leftovers after that as well.
