Crock Pot Chicken amp Dumplings

I`m still on a crock pot roll! This meal is a chicken & dumpling one. As with most crock pot recipes, this was flavorful, nearly effortless, and over all simple to do. In the end it kind of tastes like a good, homemade chicken pot pie with the dumplings mixed into it. Trust me, it is good.

I started by putting 3 chicken breasts into the bottom of my slow cooker and then pouring in a can of chicken stock and 2 cans of cream of chicken soup. I sprinkled in some different seasonings...things like seasoned salt, pepper, garlic powder, onion powder, cumin, and Old Bay. I put the lid on and walked away from it. After 7 hours I came back and pulled out the breasts and shredded the chicken. I then put it back into the crock pot and dumped in a can of sweet peas and a can of sliced carrots. You could use fresh and put them in at the beginning but I didn`t plan to use any other veggies until hours after it had been cooking and had some canned veggies on hand... so I just used those. At this point I also took 2 containers of refrigerated biscuits and tore them into chunks and tossed those into the top of the mix. I used a spoon and kind of pushed them down a bit into the wet mixture to make sure they could soak up the flavor. I put the lid back on and let it cook for 3 more hours (on high for the last hour).

It is so flavorful and even the picky boys enjoyed it. I can see this being a good meal when fall and winter rolls around. After spending a day outside at some of the fall-winter festivals and coming in to enjoy a bowl of some hot chicken 7 dumplings. Mmmm! The biscuits don`t turn out biscuit-like, either. They really do turn more dense and dumpling-like.
