Spanakopita is described as a modern Greek spinach pie. It usually consists of chopped spinach, feta cheese (& sometimes ricotta), onions, eggs, and seasonings. It is wrapped in a phyllo pastry wrap, and sometimes served as a large pie or individually wrapped into little triangles (i.e. Costco`s version). These are perfect little appetizers. The pastry shell is soft with the perfect amount of crunch to just melt in your mouth, and if you love the spinach+feta combination as much as I do, you`ll definitely love these. I pop them in the oven, and within 15 minutes you have these addicting little finger foods a variety of different people seem to enjoy. Its especially helpful when catering to vegetarians or to those fasting from meat during the Lent season.
Has anyone else tried Costco`s Spanakopitas yet? Do you guys enjoy them as much as I do?
