While making this soup for dinner tonight, my memories flashed back to the times when my mom would boil a big pot of corn soup for my sisters and I and we`ll be so contented:) We weren`t very rich then and this soup was an occasional treat as the recipe my mom uses calls for ground pork, which was expensive back then. There`s also the poor man`s version where you boil the corn soup with chicken`s legs. I know, I know, SO GROSS but my sister Vivian loves it because she was told that she could run as fast as a chicken if she consumes enough chicken feet, LOL! I try to re-create this soup but using vegetarian ingredients such as mushroom, corns, ginger and vegetarian mock duck. It is no where close to my mom`s corn soup but hubby and I love it nevertheless, especially on a cold rainy night!
