Hi everyone! My mom is a really big fan of Panda Express`s Eggplant Tofu dish, so she asked me to search for a copycat recipe online so she could make it at home. We tried out the recipe this week and she said it tastes very similar to the real thing!
The recipe we used is this one:
Changes we made to the recipe:
- Since Chinese eggplant wasn`t available at the grocery store, we substituted with American eggplant, and peeled the skin off
- We also used one large eggplant instead of 2-3 smaller ones
- We used pre-packaged fried tofu, and refried the tofu in step #1
- The amount of sauce the recipe called for didn`t seem like enough so we mixed a second batch of the sauce ingredients into a bowl and added that in later with the tofu
If you`re not a fan of spicy, you can always use less of the chili garlic sauce, or omit it completely.
