Colorful Cupcakes

Hey everyone,

During the Easter long weekend, I invited my friend over and we made cupcakes together! I`ve never been too adventurous with the kind of cupcakes, so I made simple chocolate cupcakes. The recipe we used called for oil and no eggs, and that made the cupcakes oily on the bottom when they came out. First we were confused when it said no eggs, but they turned out great still. We whipped up some icing, colored it using neon food coloring. It turned into a pastel type shade, perfect for Easter. Then we grabbed some baggies, and frosting cones and started designing! This is how some of our creations turned out :)

Not the best, but they tasted great and they were fun to make. If anyone is interested in the icing recipe, I`ll put it down below:

- 3 cups powdered sugar
- 1/3 cup butter or margarine, room temperature
- 1 ½ teaspoons vanilla
- 1 to 2 tablespoons milk

In a medium bowl, mix the powdered sugar and butter with a spoon or electric mixer on low speed until well mixed. Stir in vanilla and 1 tablespoon of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, beat in more milk, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar.
