Today for our dinner I made a really good dish! Dont know if youre very familiar with codfish but we Portuguese love it so to surprise my husband I made Codfish with Cornbread a very traditional Portuguese meal.
First of all you will need:
1 big onion
3 garlic cloves
Salt and pepper
Cut the onions and garlic cloves and put on a big pan with the olive oil and the laurel let it cook a bit then put the undone codfish and cook for 15 minutes temper to taste with salt and pepper.
In the meanwhile cut the potatoes into slices and put those to fry - dont let them to get completely fried!
Cover the bottom of a tray with the fried potatoes then put the mixture of cod and onions and above all the ingredients the core of the corn bread to finish a drizzle of olive oil over the bread and thats it!
Goes to the oven at 200ºC to get crispy bread!
