Cod With Creamy Cheese Sauce

The other night I made some baked cod. I`m a huge fan of fish (seafood in general!) and cod tends to go over well with my boys. They`re picky eaters but because cod is a mild white fish, it isn`t "too fishy" in flavor.

While cod is probably mostly used to fry, for health reasons, I chose to bake it. This was a very quick and simple meal. Simply a fillet of fish, a bit of cheese sauce, and sweet garden peas on the side.

I started by seasoning the fish on both sides with salt, pepper, and garlic powder. Then I put it into a glass baking dish and brushed on a bit of butter and sprinkled some Italian seasoned bread crumbs over top. That went into a 400 degree oven for about 15 minutes. I just wanted it to be flaky. You have to be careful not to over cook it.

In a small sauce pan I heated up some milk and flour. That cooked for just a moment and then I added some shredded cheddar cheese. That got poured over top of the fish.

I didn`t do anything special at all to the peas. They are very, very lightly seasoned with salt... that is it. They are already sweet and delicious, so they don`t require much.
