This week I suddenly became interested in cooking..probably because I had time to. Anyways, I was scanning some websites and I found this recipe (listed in the source link) for coconut shrimp. I read through the ingredients and instructions and it was so simple! Therefore, I went to the grocery store and picked up some of the ingredients I needed.
Today, I made it and it took me a while because I had trouble thawing the shrimp as well as dipping it in so every part was coated. It took me about 30 minutes...I am a bit slow because I like to get things perfect. So after I did that I put them in a conventional oven because I didn`t feel like using an actual oven. I followed the instructions and in 17 minutes, they were done! As they cooled I made the apricot sauce. In the end, I didn`t even use it because the shrimp was good by itself.
I completely forgot to photograph the finished product because I was so hungry by the time I finished and gobbled it up. Though, the picture above resembles mine except I didn`t have as many burnt pieces.
I really recommend that you make this because not only is it really simple but delicious!
