This is the meal I whipped together for Cinco de Mayo! It was SO delicious and seriously the burgers are going to be something I recreate one day. With it being a holiday, and with my boyfriend and I staying in, I decided to bring the food festivities indoors.
I shucked the corn and put it into a pan to boil with a little salt and milk in the pan for boiling. I took some potatoes, cleaned them and cut them into wedges then added them to a bowl and seasoned and tossed with olive oil, dijon mustard, sea salt, black pepper, paprika, chili powder, minced garlic, a dash of italian seasoning and a little bit of water. I tossed the ingredients together and then layered into a lined baking dish sprayed with cooking spray and baked them off in a 400 degree oven for roughly 40 minutes, turning halfway through.
Now for the best part of the meal -- the burgers. I put my lean burger into a bowl, added some diced onion, some egg, black pepper, salt, medium salsa, crushed tortilla chips (as a pretend bread crumb). I formed patties and my boyfriend cooked them outside on our grill. When done I served them on tortilla`s (I used flax seed tortillas, my boyfriend had regular) which I topped with lettuce, tomato and jarred jalapenos I also included a squirt of spicy mustard and reduced sugar ketchup.
I had some asparagus that needed cooking so it made an appearance in our meal but I drizzled it with olive oil and some garlic and roasted it in the oven. Overall it was a fabulous meal, quite yummy and different!
