Christmas traditional recipe: meat rolls

Among the usual meals that my mother makes for Christmas are also what we call the meat rolls. They are very delicious, but kind of complicated if you are not and experienced cook.
They are basically some chicken breasts, that are flattened, so they can be rolled. You make a special stuffing paste, made from mushrooms, carrots, cucumbers and some other vegetables and spices. Once the stuffing is ready, you take the piece of meat, with a cut sausage and you roll them together, just like you roll a pancake. Then you make sure everything is tight up together, with some string or some toothpicks. You put them in a baking tray, with some sauce, water, and maybe some wine and you let them cook in the oven for about 1.5-2 hours. In the picture, you can see how they look after they are freshly removed from the oven. They are best served with pickles.
If you want to do this, make sure you use fresh ingredients, especially the meat. And also, try not to overwhelm your stomach, as this is very a heavy meal. You do not want to eat too much and end up with a stomach ache.
