I tried a new recipe again today. I`ve been baking a lot recently cause I`m bored with just baking the same stuff over and over again. And whenever there is something I find I like in the bakery, I try to replicate the item. And at my local Safeway there are these cookies called susans. They are just basically shortbread cookies with fudge topping. I love those cookies so much that I want to make my own or something similar to it so I can have it whenever I crave them and of course they are fresher when they are baked at home. So I found this recipe and tried it tonight.
It was really simple to make. I just creamed the butter, sugar, vanilla and salt together until it was fluffy and then slowly added the flour. Then made them into balls and baked them for 10 minutes. Then took them out of the oven and made a dent in the middle of the cookie for the yummy chocolate topping. After making the dent, I put it back into the oven for another 9 minutes and it was done baking. I topped it off with some chocolate after the cookies cooled. I then had to let the chocolate set so that I could pack it into a container without the chocolate getting everywhere.
I can say that it tastes similar to the susans I tried from Safeway. I find that these are not as sweet. It might be the chocolate that I used. I used semi sweet baking chocolate. I think that really balanced it out between the cookie and the chocolate. If you like shortbread and chocolate together, give this recipe a try.
