This is a more traditional spring roll than the ones you get served in other Chinese restaurants. They are very different from the Vietnamese spring rolls too. Rather than sweet and sour sauce, they give you a side of oyster sauce.
These spring rolls use four key vegetables:
Thin Sliced Carrots
Wood Ear Fungus
Most of the time, meat is not added unless you order it on request. Personally I prefer this Chinese spring roll rather than the Vietnamese ones because they are less salty and the vegetables blend well with each other.
There`s a certain crunch and crispy texture that you only get with an all-vegetarian spring roll that you don`t get when meat is added. The meat adds a softer touch to the spring roll.
