Skyline (and probably Gold Star) make a dip that is layers of cream cheese, their signature chili, and cheddar cheese. Well, when I had opened up my recent BzzAgent package and saw tortilla chips, I immediately decided that is what I wanted to snack on. I checked the pantry and, sure enough, I had a single can of Skyline chili. Cream cheese? Check! Cheddar Cheese? .....nope. AHHH!!
Well, I decided I would try to substitute it out for Velveeta cheese, which I had left over from my buffalo wing soup.
I started by layering some cream cheese into the bottom of a shallow bowl. Then I poured a bit of the chili over the top (which I had heated on the stove top), and then I got to work with the Velveeta. I had to put it into a small bowl and then heat it up in the microwave to turn it to a liquid that I could pour over the top of the chili. The problem is... it quickly turned back to a semi-solid.
Let me just tell you, the Velveeta was NOT good and is NOT a substitute for shredded cheddar cheese. LOL! Ultimately, I ended up pushing the Velveeta to the side and just dipping my tortillas into the chili and cream cheese layers. That was significantly better.
