I shared during the week that over the weekend I made a big pot of homemade chili (see that post here: http://www.luuux.com/food/dinner-homemade-chili). I was getting tired of eating chili and wanted to do something different with it, so I figured I`d incorporate it with some pasta. I put some salted water onto boil and while that was boiling I got out a saute pan and put the remaining chili in it. I thought my chili on its own mine by a little watery, so I decided to add in a can of tomato sauce, a can of tomato paste and boosted up my seasonings (oregano, chili powder, cumin and black pepper). I let it come to a simmer on the stove to thicken and after my pasta was boiled al dente I drained it, added it into a lasagna pan and added in my sauce, mixed to combine and put it in the oven for 15 minutes. I like cheese so I put some fat free mozzarella on a quarter of it and left the other half plain since I figured my boyfriend would be eating more of it than I would.
I will say this was totally delicious. It tasted better the second day (brought it to work for lunch) because the sauce got REALLY thick and the flavors marinated even further. So amazing! I`m definitely going to be making this again next time I make chili.
