I have been trying to make some healthier lunches so I can avoid the easy tv dinner habit I`ve gotten in. So, on Sundays I will make a couple batches of healthy stuff so they are easy to grab for lunch during the week. I made this chickpea tuna salad which was just a can of tuna, can of chickpeas, olive oil, lemon juice, salt and pepper, parsley, red bell peppers and onion. It was just a matter of opening some cans, chopping a few veggies and mixing it all together. I think the onions could have been chopped a little finer and I will make this again with that revision next time. You should give it a try - really filling and healthy too.
