Some time ago I made for dinner chicken with coconut milk and saffron it turn out really delicious thats why I love to cook with chicken its very versatile!
For this recipe cook one onion and three garlic cloves with some olive oil (leave it a few minutes to cook) then dilute one coffee spoon of saffron in a little warm coconut milk and left it to incorporate well with the remaining ingredients.
I added five chicken legs free of skin left it to cook on all sides and tempered with salt, pepper and some fresh corianders.
Let the meat cook slowly. When it is ready put the remaining coconut milk (I used a 200ml bottle) and bring to boil!
To compliment I made some basmati rice and a natural juice with banana, apple and some orange juice it was delicious!
