I am trying to eat light options for dinner so tonight I made chicken quinoa salad from ingredients I already had at home.
What`s in my salad?
- The greens of course! They`re the organic mixture you could find at Costco.
- Chunks of diced chicken
- Quinoa rice
- Sliced almonds
- Shredded cheddar cheese
- Splash of lemon juice
And, overall - the salad was filling from the quinoa and chicken and very tasty/healthy. I will be having this for lunch (a smaller portion) as well.
