Chicken dinner

This actually from last week. I forgot to post it, and just found it in my memory card.

My husband and I love most kinds of meat, but we have been slowly shying away from red meat. We, I, thought it best to eat more fish, and poultry. You know what this means. You will see a lot of chicken posts from me.

Anyhow this is what we ate. I still had bread left over from the night prior when I had made Bruschetta. I don`t like to put food to waste, so I went ahead and made some more. Bruschetta is just bread with tomato topping. One is supposed to use basil, but its hard to find certain seasons.
What I did:
Cut the bread in small pieces. Melted butter and garlic salt in a bowl, then covered the gread in it. Put it in the oven for 20 minutes, turning over at the half point. In a small bowl add diced and cut tomatoes, olive oil, balsamic vinegar, garlic salt (I add that to just about everything), and parsley. Mix together and top on bread once ready from oven.

For my chicken I melt a tiny bit of butter with yes garlic salt, parsley, and a bit of lemon juice. I covered the chicken in the mix and put it to bake at 375 for an hour in the oven.

For my mashed potatoes I cut the potatoes very small and out them to boil. This cuts down on the cooking time. Once they were down I drained them. I then added milk, butter, and....garlic salt! I can`t help it. It really does have a kick to it. They turned out very fluffy and delicious!
