I made this delicious chicken chili in the crockpot the other day and have been eating it for lunch and dinner! Since it came out really thick (I used extra chicken since I had it) I have also used it as a quesadilla filling - YUM! All I did to make this was put some raw chicken breasts (I used 4 but the recipe called for 2) in the crockpot and topped with a can of drained black beans, a can of Rotel, a can of corn and a 8ox package of cream cheese on top. I also added some cumin, onion powder and chili powder. It would have been even better looser chili consistency if I had maybe added 1 extra can of Rotel just for the juices, but I really like the way it came out. I also used a crockpot liner and these things are awesome because you just toss them and don`t even have to clean out the crockpot! With 6-8 hour cooktime, things can really get stuck onto a crockpot, so since discovering these liners I never go without them! The pictures show it in the crockpot before cooking and then 6 hours later after cooking on low.
