For dinner tonight I made something simple and quick. The "picky boys" haven`t been feeling well and wanted something simple, not too complex so it would be easy on their stomachs. I had originally planned to season up the chicken more, but left it less complex for them to be able to keep it down.
I cooked some diced up chicken pieces in a bit of oil and seasoned with bay seasoning, salt, pepper, garlic powder, and onion powder. I let it get golden before I removed it from the pan. Then, I put a flour tortilla into a dry heated pan and filled one half with a Mexican cheese blend and the chicken pieces. Next, I folded it over and let the tortillas crisp up. I flipped it and did the same on the second side. Finally, I pulled them from the pan and cut them in three pieces and served with a bit of sour cream.
These would be really good spiced up a bit and with some tomato and salsa... but, I had to keep it simple for the boys. It was still really good, though. It was a satisfying dinner.
