This is definitely going to be a HUGE advertisement post for anyone living or planning to visit the Chicagoland area. One of my awesome cousins and his wife have their new food truck business up and running and will be making their rounds around Chicago. For now, they are focusing on major college campuses (and maybe the loop) during lunch hours.
What`s on the menu you ask? Well who doesn`t love a good Banh Mi?!?
Their menu focuses on the Vietnamese Banh Mi, with a twist.
`Banh Mi. East meets West in this one-of-a-kind sandwich where cooked, cured, and pickled are placed neatly in a French Baguette for a myriad of flavors that stimulate. The Banh Mi has been well-received in kitchens and food trucks across the country, but even classics need innovation. Chicago Lunchbox wants to bring to you a mix of the old and new. Coming from a Vietnamese-American background, sandwich slanger John Nguyen has added a twist to tradition. Inspired by his upbringing in authentic Vietnamese kitchens and his own appreciation of the best of Asian flavors, he has created Banh Mi sandwiches that pay tribute to all things yum. From Johns favorite Thai dish, ground Thai basil chicken, to longanisa, the savory Filipino breakfast sausage, there is no lack of creativity found in these lunchboxes.`
I`ve tried everything on their lunch menu and have to say that the Viet and Thai Banh Mi`s are my favorites!
Check out, and like, their Facebook page to stay updated on their daily stops. It`s definitely worth the trip!
