I didn`t want to be greedy and keep this delicious recipe to myself, so I am gonna share. This ia recipe for the chewy chocolate chip cookie. It`s crunchy around the edges and chewy in the middle. The cookies aren`t thin cause I love my cookies thick. So if you`re like me, this recipe is a must try. I got this recipe from King Arthurs Baking book, sorry forgot the exact title. So let`s get started!
1 1/2 sticks butter (room temperature)
1 1/4 Cup brown sugar
1/4 Cup corn syrup (the light syrup)
2 tsp vanilla extract
3/4 baking powder
1/4 tsp baking soda
2 1/4 Cup unbleached flour
2 Cups chocolate chips
Preheat oven to 375 degrees. Beat butter, brown sugar and corn syrup together until everything is combined. Then add in the vanilla extract, baking powder, salt, and baking soda. Mix that in. Then add in the egg. Mix well until the egg is incorporated. Then add the flour and mix until the flour is incorporated, don`t over mix. Then stir in the chocolate chips. Put 1 TB sized balls of cookie dough onto a pan 1 1/2 to 2 inches apart and bake for 12-14 minutes or until golden brown around the edges.
Tips: For me as I said earlier, I love my cookies thick and chewy. For this recipe it doesn`t asks you to put it in the fridge for a hour or so but I do that anyways. The reason is because after you`re done mixing all the ingredients together, the dough is gonna be very soft. And if you bake it right away there is a high chance that you might get thin cookies. So I leave it in the fridge for at least an hour to chill. After an hour or more, I take it out and use the 1 TB ice cream/cookie scooper to scoop the dough out and then I place it onto a parchment lined baking sheet. The parchment paper prevents the bottom of the cookies from turning a really dark brown or even burning and it makes clean up really easy too, just look at picture #3 and you`ll see what I`m talking about.
