YUMMMM! About a week ago an old coworker of mine posted something she has pinned to her Pinterest board. It was for cheesecake Thumbprint Cookies. Oh my goodness! They looked delicious so of course I looked for a recipe to make some.
I followed the recipe exactly as it was written. When I cook I eyeball...when I bake I make sure I measure. LOL! It was really quite a simple recipe. You make a mixture, which is your filling and then a separate mixture which is the dough for the cookie.
You press into the center of each cookie before it goes into the oven. You can do this with your thumb or the back of a wooden spoon handle. They go into the oven for a few minutes to start setting up. You take them out, press down the center again and then put them back into the oven (but turn the pan the opposite direction they originally went in). They cook for a few more minutes. You remove them again and this time fill the centers with the cream cheese mixture. They go back into the oven so that can set up.
I put mine into the fridge once they were done cooking so the centers could cool back down. It only took about 20-30 minutes.
These are delicious cookies! They`re not too sweet yet will satisfy a sweet tooth. I can imagine these would be delicious with some sort of berry jam in place of the cheesecake OR under the cheesecake mixture. Mmmm, I bet a nutella mix would be good, too! Oh man, the ideas are flowing now!
