Cast-Iron Tortilla Pizza

This super simple dish is possibly my new favorite!

What you need:

1 12 inch Cast Iron Skillet or a cookie sheet
2 tablespoons vegetable oil or olive oil
2 burrito-sized tortillas
1/8 cup of marinara or pizza sauce
1/2 cup of cheese separated in 1/8 and 3/8 cup sections
Whatever topping you choose. For this one I used 1/4 of a red onion diced and one diced Roma Tomato

What you do:

Take your skillet and oil and coat the inside of the ENTIRE pan using a paper towel. Set your paper towel aside, you`ll need it again.

Put your skillet in the oven and turn the oven on to 375. If you don`t do this, your pizza will stick to the pan and make a hot mess.

While this is preheating, I chop up my toppings.

After the oven is preheated, I remove my skillet and run the paper towel soaked in oil over the inside again.

Lay the first tortilla down, and put the 1/8 cup cheese over the entire surface.

Place your second tortilla over the top of that. You can layer as many tortillas as you want for your crust, but 2 is mighty sufficient.

Take your marinara sauce and spread it evenly over the top of the second tortilla leaving about 1 inch to the sides. I use the bottom of a gravy ladle to do this.

Spread your remaining 3/8 cup cheese over the top of the marinara and pat it into the sauce a bit.

Apply your toppings evenly over the top of the cheese.

Place in the oven at 375 for 15 minutes.

Yields 6 slices. This is the perfect size for my toddler and I for dinner!

**Edit: MAKE SURE you wipe out your skillet while hot. DO NOT use water and ESPECIALLY never use soap on cast iron. You want the oil in the metal. It protects it from rusting, particularly with generations old cast iron like my set. All you should need to clean this up is a wad of paper towels. After you are done wiping out all the food particles, take that same paper towel with oil on it, run it around the entire inner surface of the pan, and put the pan back in the cooling oven over night.
