Today for lunch I made cashew chicken with steamed rice. I had already cleaned and cut the chicken so all I had to do was cut the vegetables and then cook! The prep time plus the cooking time combined was about 40 mins. So not bad at all.
Im sharing my recipe in case you are interested :)
♥ 3-4 chicken breasts cut into small thin pieces
♥ 2 thinly sliced bell peppers
♥ 1 sliced onion
♥ President`s soy ginger sauce ( can be any brand and add as much as you deem necessary)
♥ handful of unsalted cashews
<strong>Ingredients For Chicken Marinate:</strong>
♥ soya sauce
♥ worcestershire sauce
♥ sriracha sauce
♥ corn flour
♥ chinese salt
I marinated the chicken for about an hour and then cooked it in a skillet with a little bit of olive oil. Afterwards I added the veggies and let them cook with the chicken before I tossed the cashews on top. Then I added about 4-5 Tbsp of the soy ginger sauce on top and let it cook for another 5-10 mins before serving.
