Carrot Cake Cupcake with Lemon Cream Cheese Frosting

I haven`t been living in my current neighbourhood for too long, so recently I decided to walk around a bit and check out the local businesses and whatnot. I came across a gluten-free bakery that I had heard good things about, and went in to check out their goodies. I don`t have coeliac disease or a gluten sensitivity (that I know of!), but I like trying different things and supporting local businesses, so why not? :)

There were a few different treats at this bakery, including pizza rolls, apple fritters, cinnamon buns, muffins...but I decided on a carrot cupcake with lemon cream cheese frosting. I wasn`t expecting it to knock my socks off...I mean, I expected it to be tasty, but then again, I have had gluten-free cupcakes that were hard as rocks before. So let`s just say that my expectations were not high. But my goodness! This cupcake was AMAZING. You wouldn`t even know that they don`t use wheat! It was moist, and just a little bit spicy, like any good carrot cake should be. :) The frosting was a bit sweet but still yummy. The cake itself was definitely the star!

I will definitely be going back to this bakery, even though I have no dietary restrictions. I eat enough wheat as it is, so I might as well switch up my grains every now and then. At least, that`s how I will justify getting more goodies from this place, lol! :)
