Carrot cake and coconut

350g of carrots
4 eggs
200 g sugar
200 g grated coconut
100 g wheat flour
1 teaspoon (tsp) baking powder
butter and flour to form
desiccated coconut for dusting

Grate the carrots and set aside. Beat eggs with sugar until cream stand. Add the grated coconut and carrot purée. Beat again. Finally, add (without crashing) flour mixed and sifted with baking powder. Pour the dough in a smooth and low, greased with butter and dusted with flour. Bake until browned and cooked. Let cool and unmold. Sprinkle with coconut.
