Carrie`s Kale Soup

Beef Shin bone with meat and marrow
1-1 1/2 pounds of chourico
Big bunch of fresh kale
Peeled and cut up fresh carrots
Peeled and cut up potatoes, diced into one inch cubes
Can of red kidney beans or canned fava beans
salt and pepper to taste

Simmer the beef bone and chourico until the beef falls off the bone (2-4 hours), take out the meat and strain the broth into a separate container or pan. In the pan you used for simmering the meat...without cleaning it first, add carrots, potatoes, and about 2 teaspoons of olive oil and saute vegetables for a couple minutes. Add meat broth, beans, fresh kale (cleaned and chopped), and salt and pepper. Let simmer until vegetables are tender, then add meat. Clean the meat and either cut up or break apart the chourico. Let simmer a bit longer then enjoy! Always a big hit, and the trick to a perfect pot of kale soup is the time. Let it simmer long enough so the meat is tender, and the vegetables are thoroughly cooked and they will be asking for more! :)
