I`ve been in a baking mode lately. Trying out new recipes or looking for recipes that contain flavors that I love like coffee. I`ve been making a lot of cookies lately like the regular chocolate chip and sugar cookies. Those tastes really good but what I really want is some coffee flavored cookie. This got started with the cappuccino cheesecake. I was like, since there is coffee flavored cheesecake, I think I can find coffee flavored cookies too. Well I indeed did find a couple and this was the first one I tried. Whenever I try out a recipe, I normally stick to the directions but maybe with some minor changes. This one I only left out one step which was to add some nuts into the batter. Since not everyone in my family is a fan of nuts I just left it out. This recipe calls for coffee or espresso granules mixed into the batter dry along with chocolate chips and nuts. I omitted the nuts but went ahead and added the chocolate chips which was 2 cups. Then you top off the cookie with some coffee glaze icing. I love the icing cause it has more strong coffee flavor than the cookie. My final thoughts on the recipe is that I can taste a little bit of coffee in it but personally for me, 2 cups is just way too much chocolate chip for this cookie since it`s supposed to be coffee cookies. After this batch is finished off, on the next batch, I am going to leave out the chocolate chip or just add 1/4 cup and more coffee granules. Other than that the cookie is great.
