Butternut Squash Cristons

The Oscars were this past sunday, so a group of friends and I got dressed up in our best attire and went over to my girl friend`s place to attend an Oscar party she was hosting. She is one of the best party hostesses I know, and is usually quite creative with the appetizers she puts out.

For Sunday night, one of my favorites were her butternut squash cristons. They were so simple but packed with so much flavor. Basically just roast some diced butternut squash on the oven until softened. Then, place the roasted butternut squash pieces on sliced toasted french bread. Add a few buts of blue cheese for that kick and season with balsamic vinegrette and you`re ready to serve!

This was definitely a hit!
