One of my favorite things about fall and winter is butternut squash. (Can you tell I`m way behind on my food posts?) I was trying to eat healthier as well, which is hard to do as a college student.
I just chopped up some of the squash and cooked it in chicken broth. Then I put some brown rice in a bowl and topped it with the soup. It was good and I didn`t feel guilty eating it at all!
