Breakfast Burrito
you need
Olive oil spray
Onion and bell pepper, diced, as desired
2 egg whites
1/2 cup black beans, cooked
1 small sprouted whole-grain tortilla or 1 large low-carb tortilla
1/2 oz shredded Mexican cheese blend salsa, as desired

1. Mist a skillet with olive oil. Heat on medium.
2. Add onion and peppers and saute until soft.
3. Add egg whites and some of the beans, as desired. Scramble until cooked through.
4. Pile the mixture onto a tortilla, top with cheese and salsa; fold burrito-style. Serve with remaining beans and salsa, as desired.
