The first time I ever tried burnt pudding was at a restaurant that my boyfriends took me to for my birthday. It was a fancy place and burnt pudding was what they gave when it was a guest`s birthday.
It was soooooo good! It had this caramelized sugar shell on top And beneath it was smooth, creamy and, flan-like. Super yummy! I could have eaten it all to myself.
Because I loved this dessert so much and I love to cook and bake, I decided to try making it myself. I found a recipe that I went off of and figured out the best calculations for the ingredients in my opinion.
Ingredients you will need....
Two cups of heavy cream (one quart carton was perfect for me)
Four egg yolks
1/3 cup of granulated sugar
One table spoon of vanilla extract
Separate for topping....
Four tablespoons of granulated sugar
One tablespoon of brown sugar
Set the oven to 350 degrees F.
Put the heavy cream in a small sauce pan and heat on medium. Stir ever now and then, making sure it doesn`t burn. In the mean time beat egg yolks, sugar, and vanilla in a bowl for 3 mins. When the cream starts having small bubbles forming on the edge, removing from the heat. Slowly Add the cream to the yolk Nd sugar mixture while mixing at the same time.
Get six custard cups and place them in a baking dish with 1/2 cup of water. Fill each cup about half way with a ladle. Bake for 45 mins.
After being baked, put them in the fridge until they are COMPLETELY chilled. I say that. I say that because I was tempted to just eat it before it was chilled and when I did it just tasted like a warm egg custard. That is not how it`s supposed to be but, when its completely chilled its amazing and creamy. (After trial and error I just left them in over night And it turned out perfect)
After they have chilled, I mixed the brown and granulated sugar together and spreaded the mixture evenly on top of each burnt cream and put them in the oven (350 degrees F) until the sugar caramelized and browned a little. You can put it in a broiler if you have one. I didn`t so I used the oven.
Let them cool and chill.
