That`s right... buffalo wing <em>SOUP!</em> It sounds strange, I know. But trust me when I say it is absolutely delicious. If you enjoy spicy buffalo wings then I think you`ll really like this. It is a less messy way to enjoy buffalo wings, too. You can keep your face from wearing so much wing sauce, haha!
This is also a slow cooker recipe, so it is another one of those that you don`t have to babysit too much.
I started the night before by boiling 2 chicken breasts. Once they were cooked I cut them up into chunks. I put that into a bowl and into the fridge over night. I just did this step the night before to save me some time and I didn`t already have any kind of left over chicken that I could use. I wanted to be able to just wake up and go right to cooking in the crock pot. So, the next morning I chopped up some onion and celery and put that into the crock pot. Then I dumped in the chicken. Next was some chicken broth and some of Frank`s Wing Sauce. I also put in about 4 oz of Velveeta cheese. I made a roux of some butter and flour and once that was well combined that was poured into the crock pot. The final thing to go in at this point was about 2 cups of 2% milk. You can use 2% or less. If you use anything higher the milk will curdle and...blech, let`s just not mess with that. I made sure everything was mixed up well and put the lid on. I left this to cook for about 5.5-6 hours on LOW. When the soup was nearly finished I tasted it to see if any spices were needed and at that point I added the teeny-tiniest bit of celery salt and garlic salt. If you wanted, you could just use a bit of garlic powder and celery seed to cut down on the salt, depending on how much you wanted. Just taste to determine.
I served this with a breadstick on the side that I could dip into the soup as well as a stick of celery that I just peeled (this helps reduce the strings) and split in half. I sprinkled some bleu cheese over the top as well. You can`t have hot wings without ranch or bleu cheese, right?! :-)
It sounds strange but it is absolutely delicious and will get rid of any wing cravings. This would also be absolutely fantastic when the weather turns brisk and chilly. It would warm you right up!
