Buffalo Chicken Casserole

Recently I received a BzzCampaign package for a Progresso Recipe Starters product. I had selected the Fire Roasted Tomato flavor. I had such high hopes for this product but in this particular recipe... I didn`t enjoy it. Not even a little bit. I found this recipe on their site and it looked and sounded good.

Basically, you take hash brown style potatoes and heat them up (they come frozen) in the microwave. Then you add some shredded cheddar cheese, a can of the Recipe Starters, and some ranch or bleu cheese dressing to the potatoes. You put that into a baking dish and layer on some buffalo style chicken tenders. That goes into the oven to bake until hot. Well, I mixed up the potato concoction. I tasted it and did not like it. Not even a little bit. OH, and I didn`t even use the whole can as they suggested. It already tasted far too strong. I`m glad I didn`t use more. Because of how strong it was I decided to add a layer over top of that of just plain has browns (seasoned with salt and pepper) and a sprinkling of more cheddar cheese.

It wasn`t good. The flavors didn`t work together. I got an Italian feel from the potato portion and then buffalo wings on top. It didn`t mesh. It was like two different dishes slapped together. I`d have preferred to use some Frank`s Hot Sauce in the potatoes instead. That probably would have been much better. Or, no seasoning into the potatoes at all! Before serving, I did sprinkle on some bleu cheese (as the recipe suggests) and served some celery on the side rather than over the top.

I don`t think I`ll be buying this Recipe Starter. I MAY pick up another flavor...but even then, I`m not certain....

I did taste the Progresso product on its own and even alone it didn`t taste too fantastic. I`d have preferred to invest time into my own roasted tomato sauce.

I would love to be able to give it a better review, but I can`t.

None of us enjoyed the meal or the flavor of the Recipe Starter. We didn`t even finish the dish. We ended up pulling out something else to eat...and that rarely happens. :-(
