This wasnt exactly supposed to be what I had for lunch today. I made bacon around 11:30 for BLTs for lunch but since I was in the kitchen, being productive I decided to make my egg hash tarts for breakfast for the next few days. After measuring everything out I only had 1/3 cup of diced potatoes left and a bit of eggbeaters left in my container so I just decided to use those up with some bacon and toast. Turns out it was delicious and a lot yummier than the BLT I was going to have!
I made ½ cup scrambled egg beaters (seasoned with black pepper and a dash of sea salt), 3 slices ultra thin turkey bacon, 2 slices light wheat toast and 1/3 cup diced potato hash browns (seasoned with garlic and black pepper). Absolutely delish and filling.
