This is what I had for breakfast this morning - veggie scrambled egg beaters mixed with a bunch of seasonings and topped with sriracha and turkey bacon - served with a side of fresh mango. I enjoyed it so thoroughly that when I got home from work, while making my salad for lunch tomorrow, I decided to go ahead and make this again for breakfast in the AM.
I started off by dicing up some peppers, onion and mushroom. I sprayed Pam into my frying pan and began cooking my veggies. I then spritzed on some spray butter, then topped with minced garlic, black pepper, sea salt, red cayenne pepper, oregano and garlic powder. I mixed it up, added a little water (literally like a teaspoon or two) to steam the veggies for a second. I then added in 1/2 cup egg beaters mixture and combined it continuously until well combined and cooked. The turkey bacon was part of last nights dinner (BLTs) so I just threw 3 slices in my bowl and heated it all up in the microwave. I scooped it out onto my wheat flax tortillas, topped with sriracha (LOVE that stuff!) and ate. That is with some fresh mango on the side.
