Breakfast: Eggs In A Basket

This is what I made for breakfast this morning. I was hungry but didn`t feel like fruit by itself or a breakfast sandwich so I decided to make eggs in a basket. I haven`t had this in a very, very long time and it sounded good to me this morning and I knew it wouldn`t take any time at all to cook.

Eggs in a basket is a classic kind of meal to give to children.. but hey, adults can enjoy it too! It is basically just toast with some fried eggs (typically done over easy).

I start by taking two slices of bread, stacking them together, and using a glass to cut out a circle from the center of the bread. Then, I butter one side of the bread (and the holes that were punched out). I put a bit of butter into the skillet along with a good amount of garlic powder for extra flavor. Once the butter in the skillet has melted I place the bread (non buttered side down) into the skillet and crack a single egg into the center of the bread slice. I season the egg with some salt and pepper and then put a lid on the skillet. I put the lid on to help cook the top of the egg so it is easier to flip. Once I feel it has cooked enough on the first side I flip it to the other to continue cooking. Voila! Easy, tasty breakfast! :-)

If you want extra crispy bread put the bread in and allow it to toast up on the first side, flip it and THEN add the egg after the bread has been flipped. Some prefer to do it this way so they don`t have to worry about flipping the egg at all. Once the bread has been flipped and you add in the egg you can cover the lid and just let the steam cook the top of the egg. Remove from the pan and done. I do it both ways depending on my mood. I don`t really have a preference, though, they tend to look prettier if you put the egg in AFTER the initial flip because nothing is moving around and it just "sets" into place. To each their own though, right?
