a few days ago, i cooked up a bunch of pancakes and froze them to eat at a later time. i find they reheat extremely well in the oven or the toaster, so they`re a nice breakfast option. i used the recipe from the source link (see below) EXCEPT i used lemon juice + milk as an alternative to buttermilk and simply added chocolate chips. i don`t want to buy buttermilk because all i`ll use it for is for these pancakes, so i like to just use a substitution when i can.
they came out super fluffy and even after reheating, i was surprised by how fluffy they stained despite being stuffed in the freezer for a few days!
i also heated up a hash brown patty. the one i had was from trader joe`s, but most grocery stores carry them as well.
it was a very nice and filling breakfast that got me through my two long morning classes :)
