Sunday morning we stayed in and I whipped up some breakfast burritos for us. I don`t know what made me crave them but I so badly wanted one. I wasn`t even entirely certain I had everything I needed. I went rummaging. I didn`t have all of the ideal ingredients but I made it work.
I started by warming some extra virgin olive oil in a pan and then adding some diced red bell pepper. Once that had softened a bit I added in some chopped ham. Then, I sprinkled in some garlic powder, some salt and pepper, and onion powder. Quickly I cracked a couple of eggs and beats them into everything that was already in the pan. This created a scrambled egg in all of the other ingredients. Once the egg was cooked through I sprinkled in a mexican cheese blend. That was the filling for my burrito. I just put that into a high fiber, low carb tortilla... I think the brand is Ole?
I scooped out some medium picante sauce to spoon into each bite of my burrito. It was quite tasty. Don`t mind my silly little bowl and green spoon....lol...they didn`t change the flavor of the food, haha.
