Breakfast burrito

For a brilliant breakfast on the go, wrap up some eggs, avo and tomato in a soft tortilla for a protein-packed, low carb energy blast.
2 organic eggs, beaten
pinch of salt and pepper
1 tsp olive oil
1 soft tortilla
1 tomato, chopped
ΒΌ avocado, sliced
10g low-fat grated cheese
splash of Tabasco (optional)
small handful baby spinach
sweet chilli sauce to serve

1 Beat the eggs with salt and pepper. Heat olive oil in a non-stick pan and pour in the eggs. Cook like a flat omelette until the eggs are just cooked but still a bit soft. At the same time, warm a tortilla in the microwave or flat toaster for about 15 seconds.

2 Slide the egg onto the tortilla, followed by the tomato, avocado and cheese. Splash on a little Tabasco if youre game, and top with spinach and sweet chilli sauce. Roll up and eat. (If you want the filling extra-warm, heat the rolled tortilla on a flat sandwich press for about 1 to 2 minutes.)
