I`m home sick today with a cold, so I had some time to make a good breakfast/brunch. :) I decided to try this http://chocolatecoveredkatie.com/2012/02/12/red-velvet-pancakes/ from http://chocolatecoveredkatie.com, as I`ve been loving her recipes lately. Needless to say, it was awesome! Here`s the recipe, with my personal tweaks: Ingredients:
- 1/4 cup spelt flour
- 1/2 tsp plus 1/8 tsp baking powder
- 1/8 tsp salt
- 2 tbsp cocoa powder
- 1/2 tsp vanilla extract
- 1/3 cup frozen raspberries - thawed and mashed
- 1 tbsp oil
- 1/4 cup almond milk
- 1 tbsp agave nectar
First, whisk together the dry ingredients, then add the wet ones. Then, cook your pancakes as you usually would! I used a heart-shaped pan for this, which was tricky when it came to flipping the pancakes. In the future, I`ll just use a regular pan (unless it`s a special occasion). I used a 1-inch cookie scoop to drop the batter in the pan, so that the pancakes would be the same size. After the pancakes were cooked, I spread some non-fat, plain Greek yogurt on the pancakes and stacked them. Then, I put some frozen berries on top. And voila, dessert for breakfast! :) I was expecting these pancakes to be good, but not as good as they actually were! They were AWESOME. The pancakes were super-fudgy and chocolatey despite being low in fat. They actually tasted really good with the Greek yogurt, too! It felt like I was eating a layer cake for breakfast, lol. I`m seriously considering making the batter the night before so I can have these in the morning before I leave for work. They are seriously so good! Do you like pancakes?
