For breakfast today I decided to make pancakes. I made them all from scratch this time. The reason being is because I used to buy those premade pancakes mixes and I never end up using the whole box. Last time I bought a big box from Costco and I threw away 2/3 of it away. That is such a waste! So I decided to make them from scratch and boy were they sooo good. They were soft and fluffy. To top it off, I drizzled some maple syrup on it. Let me share the pancake recipe with you.
3/4 C milk (can replace with buttermilk)
2 Tbs white vinegar (omit this if using buttermilk)
1 C Flour
2 Tbs white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 Tbs butter melted
Combine milk with vinegar in a medium bowl and let sit for 5 minutes to sour.
In another bowl, combine the flour, sugar, baking powder, baking soda and salt. The wisk the egg and butter into the soured milk. Pour floured mixture into the wet ingredients and whisk until the lumps are gone but don`t over whisk. Heat large skillet over medium heat and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet. Cook until bubbles form and flip over with a spatula and cook the other side until browned on the other side. Ready to serve with your favorite syrup or butter.
~~One thing to take note of is that when I made this I had to double the recipe and I was able to serve 4 people and each of them got a plate of 4 pancakes.~~
